Flourless Chocolate Banana Chia Muffin Recipe
I modified Maija’s blender muffin recipe (which we LOVE) and made these decadent chocolate banana chia muffins, and I have to tell you that these are the most delicious and easy muffins ever!
The best part of making blender muffins is that the blender does all the work for you, and it doesn’t matter what order you throw everything in there, and really, you can add whatever you want! This time I chose to add chia, but you could throw some hemp hearts in, or anything else. Also great is the fact that if you’re certain your oats are safe, these are a decadent gluten-free muffin, too.
My recipe made 48 mini muffins.
Ingredients
5 C large flake oats
1 C plain Greek yogurt
4 eggs
3/4 C demerara sugar (you can use any kind of sugar, but I love the molasses-y flavour this sugar lends)
3 tsp baking powder
1 tsp baking soda
6 overripe bananas (the more rotten, the better they are — they’re super sweet!)
3 tbs chia seeds
5 tbs unsweetened cocoa powder
2 tbs chocolate chips — held aside
Throw all ingredients except the chocolate chips into the blender and blend until fully mixed. If you want to add chocolate chips, stir in after everything is evenly blended. I used the chocolate chips on top of the muffins (I put 4-5 on the top of the batter before baking).
Pour batter into a greased mini muffin pan, and if you’re like me, top each muffin with a few chocolate chips.
Bake at 350° for 20-25 minutes, or until a wooden skewer can be inserted and removed cleanly.
These muffins are moist, delicious and decadent. Enjoy!
