5 Minute Nutrient-Packed French Toast

 

I don’t know about you, but leisurely breakfasts don’t exactly fit into my morning routine. With the kids heading back to school soon, I’m already planning quick and healthy breakfasts and easy ways to pack lunches. One of my kids’ favourite breakfasts is French toast, and this one’s so easy, and so packed with nutrition that it’s in regular rotation here.

Chia is a great way to get additional nutrients into kids — they’re full of antioxidants, fibre and protein, and give a great texture to things like French toast. I even add them to scrambled eggs.

The eggs are a great source of protein for the kids, keeping them full until morning snack at school, and giving them great energy, too.

To make this an even faster breakfast, make your egg mixture the night before so it’s ready to go in the morning.

Five Minute Nutrient-Packed French Toast

4 pieces of bread (I usually use whole grain or whole wheat… might as well sneak in more nutrition wherever we can)
4 large eggs
1 tbs cinnamon
1 tbs chia seeds
1 tbs coconut oil

Whisk the eggs until combined, then add the cinnamon. You can either leave the egg mixture in the fridge or use it right away. If you’re leaving it overnight, I don’t recommend adding the chia seeds until you’re about to cook because they do soften and go a little gelatinous.

Heat 1 tbs of coconut oil in a pan over medium-high heat.

Add chia seeds to egg mixture.

Dunk each piece of bread into the mixture, and coat evenly on both sides.

brown french toastYou can serve with a little maple syrup for a treat, and fresh berries for a vitamin C kick.
